This Limited Edition bottle is made using the same recipe as Kilchoman’s regular Machir Bay release, but instead of reducing the strength to 46%, a limited number of bottles have been released at cask strength, that is, 58.3%, offering even greater intensity in flavor and richness.
About Kilchoman Distillery
Kilchoman is Scotland’s only farm distillery, located on Rockside Farm in the northwest of Islay. Here, the distillery grows its own barley near Machir Bay and is the only distillery on the island that both grows and malts Islay-grown barley for its whiskies. Kilchoman was founded in 2005 and sold its first whisky in 2009. It embodies classic Islay with distinct, elegant hints of the peat smoke that Islay is so beloved for. What sets Kilchoman apart is that its whiskies often carry a hint of citrus, adding a touch of freshness to the dram. Twenty percent of the malt comes from their own barley, and they exclusively produce Single Malts – that is, no whisky for blends. Generally, these are whiskies that can and should be enjoyed young, with a character of being fresh and lively with a hint of salt. This is due to the peat, which has been washed over with seawater for centuries.
The whisky ferments for a minimum of four days or 50 hours. After that, fermentation stops, and this is when most distilleries end the process. Kilchoman, however, continues longer, creating a secondary fermentation and more esters. They use small stills and double-distill.
Exclusive and Popular Whiskies
For the distillery’s two most popular whiskies, Machir Bay and Sanaig, a combination of bourbon and sherry casks is used. While most casks for Machir Bay are bourbon, most for Sanaig are sherry casks. Both whiskies are at 46% and are neither caramel-colored nor chill-filtered.
