Japanese Blended Whisky

Can whiskey get more Japanese than sake barrel-aged whiskey? Togouchi Sake Cask Finish is made by storing the imported bourbon casks with whiskey in Togouchi’s old railway tunnel, after which the Masterblender selects and blends the whiskeys and ages them for three months in sake casks, after which the finished whiskey is bottled. It gets an elegant aroma of vanilla, malt and green apples, oak, fruit and a bit of lactic acid in a complex taste experience. In a long aftertaste you are left with small, fruity hints, malt and a little spice.

Japanese Togouchi is another example of the Kingdom of the Sun creating excellent whisky. Choguko Jozo has for many years imported malt whiskey from Scotland and grain whiskey from Canada for the various bottlings, but since 2014 has also distilled itself. The barrel aging therefore took place in Japan. They then store in an old, 361 meter long, disused railway tunnel that was never used for its original purpose. It is relatively unusual, but works, not least because the temperature is constant and cool throughout the year at around 14 degrees and with a humidity of 80%. The whiskeys are blended and then bottled.
