It was going to be raisin juice, but it was born from incomplete dehydration during the 1964 harvest. Years have passed… Its evolution and balance are so positive, that today it would be unforgivable not to continue making it with the eternal knowledge of the Criaderas and Soleras.
Production
Grapes harvested by hand and exposed to the sun for 3 additional days to the usual harvest. It is taken to the winery in small boxes of no more than 15 kg. and fermented in barrels until reaching 17% natural alcohol. When this graduation is not achieved exactly, it is acquired by concentration in the barrel itself.
It is incorporated into our Solera from 1964. 100% Pedro Ximénez Wine from Oxidative Crianza, “unique piece” in the entire Marco de Jerez. White variety that behaves “dry” with notes very similar to “Palo Cortado” and “Oloroso”, but with the subtlety and elegance of a grape that has never been bottled with this very particular production. It is not the typical Oxidative Crianza Sherry wine, in fact the alcoholic perception is minimal thanks to the fact that the degree is obtained fermentatively and by concentration in the barrel. For this reason and to avoid refermentations, the contribution of raisin juice, which softens the wine and leaves unfermented sugars, is done very carefully each year, adding very few liters per aging barrel, until reaching 45 grams per liter in the last year. .
The selected barrels are assembled one year before being bottled in a proportion in which the Oxidative Crianza notes largely predominate, but in which the edges of the oak are avoided, following sensory tasting criteria, in order not to distort the balance. end reached. The objective is to achieve a balanced harmony between age, oak tannins, fermentative alcohol and the characteristics of the Pedro Ximénez variety.
Tasting Note
VISUAL: Dark amber wine, clean, bright, glyceric and steely with apparent density. The rotating glass presents an accentuated tear that denotes the fermentative origin of its alcoholic content.
OLFACTORY: Intense nose with aromas of cabinetmaking, typical of the persistence of the Oak and the oxidation of the years. Plums and raisins also appear in the background, finally returning to noble woods.
TASTE: Full, round, balanced in the mouth, with a soft aftertaste of natural sweetness that dissipates with a high volatile degree typical of its age. Intense in the mouth without being heavy, with smoky and soft roasted touches. Surprisingly dry without “planking” and finely almondy.
