About the Product
Decadent and tropical. The sweet St. Lucia rum casks deliver a spectacular sensory indulgence, with plenty of tropical fruits and delightful spices. The Single Pot Still character is still present. Warm and inviting – a thoroughly exotic whiskey!
This whiskey is based on the same foundation as The Irishman – The Harvest, making it a unique blend of Single Malt and Single Pot Still Irish Whiskey. The blend consists of approximately 70% Single Malt and 30% Single Pot Still.
The Irishman – Caribbean Cask Irish Whiskey is bottled non-chill filtered at an ABV of 46%.
Tasting Notes
The aroma transports you to the golden beaches of St. Lucia. Sit among the palm trees and listen to the waves. Smell the tropical fruits hanging heavily from the branches. Extremely pleasant and sweet.
The taste is warm and deep. The meeting of Single Malt and Single Pot Still whiskey results in a light sweetness and just the right amount of spice – think apple pie and cloves.
In the finish, the influence of the rum casks is clear. A wave of tropical fruits and delightful spices. Exotic notes of mango and banana, perhaps even figs. Truly memorable!

Walsh Whiskey is a family business dedicated to the revival of Irish whiskey.
Irish whiskey (spelled with an ‘e’) has had a tough couple of centuries. Once, the Emerald Isle was the largest whiskey producer in the world, and the Irish still claim that they – not the Scots – invented the golden drink. However, a series of challenges, such as famine, Prohibition, and an unwillingness to adapt to a changing market, caused the Irish whiskey industry to gradually collapse. By 1970, only two active distilleries remained on the entire island!
Fortunately, the tide has (finally) turned for Irish whiskey, and many new distilleries are now emerging across the island. Founded in 1999 by husband and wife Bernard and Rosemary Walsh, Walsh Whiskey aims to lead this Irish whiskey renaissance. They do so with two product lines: Writer’s Tears and The Irishman.

The Irishman is a masterful series consisting primarily of Irish single malt. In classic Irish style, all products are triple-distilled. This means the whiskey undergoes an additional distillation after the usual second round, resulting in a lighter and more rounded flavor.
