This is the first time that Habitation Velier has bottled aged rum from the Port-au-Prince distillery in Haiti.
The absolutely magnificent Providence 2020 is made from a blend of Cristalline cane syrup, fermented with vinasse, and distilled from fresh cane juice.
Distilled in a Müller pot still, the rum undergoes a first distillation yielding between 25% and 30% ABV, followed by a second distillation reaching between 72% and 78% ABV.
This version is a blend of 14 casks that previously contained Caroni rum. Aged for four years in Haiti’s tropical climate, the angel’s share exceeds 25%.
Concentrated and indulgent, this bottling, reduced to 55% ABV, shines with its very intense fruity and spicy notes.
Colour: Deep golden yellow.
Nose: Rich and voluptuous. Spicy (pepper, clove), camphoraceous, and exotic (ripe banana), the aromatic profile evolves towards more vanilla and medicinal notes (arnica). With aeration, aromas of cane honey and warm cane sugar fill the air, enhanced by a pleasant salinity.
Palate: Both vibrant and creamy. Finely licorice-like, honeyed (geranium), and vegetal (sugarcane), the flavor profile also oscillates between flavors of candied lemon and pineapple. Gradually, sweet spices (ginger, cinnamon) and vanilla pods gently envelop the palate.
Finish: Long and fluffy. Both juicy (pineapple), slightly tannic (cane wood), and heady (iris concrete), the tasting becomes increasingly indulgent (vanilla flan) and exotic (coconut, lychee). Candied (pear, mirabelle, ginger) and herbal (tobacco leaf) notes are accompanied by deep aromas of precious woods (sandalwood, cedar).
