Sagrantino di Montefalco is Umbria’s iconic wine and one of Italy’s great wines. APOCA is a wine that pairs perfectly with bold dishes – from roasted and grilled meats to beef, game, and a selection of aged cheeses to finish. Or simply enjoy it on its own, without food.

The wine has excellent potential for long-term aging.

Vineyards
The grapes come from several vineyards in the village of Sant’Enea in the Montefalco production area. The vineyards are located at an altitude of about 300 meters above sea level, with various slopes facing southeast, south, and southwest. The vines have an average age of between 10 and 20 years, depending on the vineyard. The soil is medium-heavy, predominantly a mix of limestone and clay. There is a planting density of 5,000 vines per hectare, cultivated using the Guyot system.

Production
At the end of July, grape thinning is carried out, and the hand-harvested grapes are picked in early October. Only the best grapes are selected for processing through a double selection – first in the vineyard and then again in the cellar before vinification. Fermentation with skin contact takes place in a stainless steel tank, where the must remains in contact with the skins for 25 days with occasional stirring. The wine is then aged in barrique and tonneaux barrels (tonneaux = four times the volume of a barrique) for 24 months. Afterward, the wine is blended, bottled, and aged in the bottle for at least one year before being released.

Interesting Fact
From the very beginning, Elena and Roberto have focused on organic production, incorporating certain aspects of biodynamic farming. Their philosophy is: “It doesn’t matter whether we call our approach ‘organic’ or ‘biodynamic’ – what matters is that we do it in the most sustainable way possible.”

To create a harmonious balance between people and the land, they have introduced a third element – animals. For years, they have kept free-range geese in the vineyards to graze on weeds and naturally fertilize the soil. They have also reduced the use of heavy machinery, as tractors compact the soil and reduce its fertility. Instead, they use horses to work the vineyards. The image of a working horse in the vineyard has even been incorporated into the current label design of the wines from Plani Arche.

The APOCA wine has an outstanding potential for long-term aging.
