Vaona Amarone della Valpolicella Paverno DOCG is incredible value for money. Burgundy red color. Opens with an intense bouquet characterized by cherries and spices. A well-balanced and powerful wine with an elegant tannic acid structure. Warm and intense flavors of rich cherries, chocolate and leather spice. Closes in a pleasant finish that makes this wine all too drinkable.

40% Corvina, 30% Corvinone, 25% Rondinella and 55 Molinara. The fruit comes from vines with an average age of 25 years. The vines grow in vineyards owned by the Vaona family, located in the hills of the Classic Valpolicella area, at an altitude of 200-250 meters above sea level. The vineyards have alluvial soils on calcareous basalts, favored by excellent sun exposure. Some vineyards are characterized by terraces surrounded by typical dry stone walls (called “marogne”).

Selective harvesting of the grapes in small wooden boxes when they are ripe. The fruit then goes through a traditional drying process for over 3 months. A light pressure precedes a partial removal of the stems. Maceration for 10-12 days at a low temperature of 1-2°C. A subsequent progressive increase in temperature kick-starts spontaneous alcoholic fermentation, which continues at a controlled temperature of 13-15°C under partially anaerobic conditions for over 30-35 days. The wine is aged in durmast oak casks and another 5 months in the bottle.

Intense notes of cherries and spices. Powerful and well-balanced with an elegant tannin structure. Pairs beautifully with red meat, slow-cooked stews and mature cheese varieties.
