The white Passi Reali is made from 70% Trebbiano d’Abruzzo and 30% Chardonnay, which is grown in the Abruzzo mountains, in the middle of the Gran Sasso and Maiella national parks, where Valle Reale’s vineyards are cultivated organically. In the “appassimento” technique, the bunches are dried before fermentation, partly by letting them hang on the vines for an extra long time, partly on mats or boxes, immediately after picking. This process lasts approx. 20 days, during which the best grapes are finally selected.
Both the Greeks and the Romans already used the technique, but in the Abruzzo mountains, in the old days, “appassimento” was often used more out of necessity than desire, as due to the cool climate it was difficult to ripen the grapes optimally. The drying of the grapes (then exclusively hanging on the vine) was a fine way to “force ripen” the grapes and increase the sugar concentration. Today, the technique is used to give the wine more body, velvet and complexity. Appassimento white wines will often have a little more residual sugar than “ordinary” wines. After fermentation, the wine is matured on its “scum” (sediment) for 2 months in steel tanks.
Passi Reali Bianco is a very delicious organic wine, with a good harmony between fruity sweetness, bite, freshness and fullness. The appassimento technique gives exotic tones of ripe, tropical fruit and the origin in the Abruzzo mountains brings a good minerality and structure.
A good companion for vegetable dishes, pasta dishes, fish, shellfish or poultry in white sauces.

They specialize in so-called responsible viticulture, and together they have selected vineyards in central Italy (with great quality potential) with a view to producing organic and biodynamic wines. The aim is also to produce wines that express the typicality of the districts and which are produced with respect for the environment and the health of the consumer.
