The seasonal mead Spring mead – hemp and juniper wood
Vårmjøden has an interesting flavor profile, with a clear honey sweetness, but the flavor profile and aroma are dominated by dry scents and flavors reminiscent of forest floor, moorland and grain harvest. The sweetness in the mead is finely balanced by a clean and distinct acidity and a very round and mild bitterness.
Serving suggestions
Vårmjøden is a semi-dry mead, its sweetness is pronounced enough to be used in certain desserts, but will often be best served with savory dishes. It goes well with animal flavors such as venison and offal and will also go well with smoked products, both meat and fish.
For desserts, it cannot match very sweet desserts, but desserts based on nuts and dried fruit without too much added sugar will still do well.
For cheese, it is a versatile mead that can stand next to all kinds of cheese, both the mild and the strong.
Glass
The spring mead should be served in a white wine glass, it needs space to fully develop its aroma and should preferably not have emphasized its sweetness.
Alternatively, it looks really nice in a champagne flute.
