The tartness of the wild berries provides a fine counterpoint to the honey in this mead. It has a rich base of berries, with a light taste of oak. A delicate long aftertaste of fruit flavors. All the good things from the Danish forests gathered in one mead. A mead where the taste from the berries and the acidity have been allowed to dominate, which makes this mead stand out the most from the other brews. Here you do not experience the typical honey taste.

Suitable for any dessert table, served cold with cheeses, ice cream, fruit, cake and dark chocolate.

This is the brewer’s favorite brew. It’s a fun mead to put together, due to the many flavors in this brew.

Description

Forest mead

Our exciting forest mead is a mead that contains all the goodness from the Danish forests. It is a mead that stands out the most because it has less honey sweetness in the taste. The tartness of the wild berries provides a fine counterpoint to the honey in this mead.

Forest mead is an unusual mead, it is dominated by a very intense acid, but is still definitely a sweet mead. The aroma is violently intense, but still mild and characterized by sweet berries such as strawberries or blueberries. The taste, on the other hand, is far more aggressive with its acidity, with clear notes of the more acidic berries such as blackberries or blackcurrants. The acid covers the intense sweetness of the mead until the aftertaste, where the sweetness is allowed to unfold.

It is brewed with a good mixture of spring and summer honey. As for berries, we have the main focus on brome and blackcurrants, but currants and wild strawberries are also included. We make a decoction of them and use the must directly in our brew.

Serving suggestions

In terms of food, forest mead is a sweet mead, preferably served with cheese or desserts. Its intense acidity and sweet aftertaste make it particularly suitable for rich and fat berry desserts; red porridge with cream being the archetype. But also for dark chocolate.

For cheese, it should preferably be served with strong and sharp cheeses; old cheese and mature red or white cheeses such as Munster or Camembert, it is worth pointing out here that its sharp acidity does not make it suitable for blue cheeses, more pure honey-sweet mead will do better.

It is also an exciting mead to use in a cocktail, such as our “Forest Peace”.

Glass

Port wine glasses or tulip glasses will be the immediate glasses to use for the forest mead, as its sweet notes should ideally be emphasized. However, it should be mentioned that its very strong aroma makes it a rare mead that can both handle and excel in large burgundy glasses.
