Sweet, rich and complex
With a king who was fond of sweet things and who was a man of power who wanted the absolute best, there was no doubt that this mead should be full of good things and that nothing should be missing. A real royal mead!

Gorm the Old is a sweet, full-bodied and complex mead, despite its dark aromas and notes, it has a fresh acidity and light bitterness that balances the heavy stale flavors that characterize it as well as its intense honey sweetness. Its smoke, fatness and fullness are reminiscent of heavy barrel-aged red wines. The apples add acidity to the mead and create a fine balance for the powerful late summer honey. The watercress gives a slightly spicy aftertaste that sticks to the palate.

Its primary purpose in pairing with food will be with cheese and desserts, however its smooth body and light tannins give it as a rare mead the potential to pair well with red meat.

Ingredients: Water, Danish honey, apples, kvan, oak and yeast. Guidance 13% alcohol.

Description

King’s mead – Gorm the Old

With a king who was fond of sweet things and who was a man of power who wanted the absolute best, there was no doubt that this royal mead should be full of good things and nothing should be missing.
The mead is made with a larger amount of honey than we normally use; a good late summer honey, a large amount of applesauce is also added to give the mead a sweet and rich base with a bit of the acidity that apples can give.

In addition, we have chosen to use kvan, as this plant was widespread in the Viking Age, where we also know that it was a good source of vitamin C for the Vikings.
As a final ingredient, we have added oak shavings to the mead to give it a little edge and character.

Serving suggestions

Gorm the Old is a sweet, rich and complex mead, despite its dark aroma and notes, it has a fresh acidity and light bitterness that balances the heavy stale flavors that characterize it, as well as its intense honey sweetness. Its smoke, fatness and fullness are reminiscent of heavy barrel-aged red wines.

Gorm’s royal mead is sweet and its primary purpose in food pairings will be with cheese and desserts, however its smooth body and light tannins give it as a rare mead the potential to pair well with red meat. As a drink for desserts or cheese, it works like a Sauternes, its intensity requires strong and sharp cheeses, or heavy and complex desserts, like honey or caramel based.

Glass

Gorm den gamle has an unusually intense aroma and can therefore be served in large glasses without losing anything, in addition it should preferably not be served in glasses that emphasize its sweetness. The best type of glass will be a classic burgundy glass.
