About Kilchoman Distillery
Kilchoman is Scotland’s only farm distillery, located on Rockside Farm on the northwestern coast of Islay. Here, the distillery grows its own barley at Machir Bay and is the only distillery on the island that grows and malts Islay barley for its whiskies. Kilchoman was founded in 2005 and sold its first whisky in 2009. Classic Islay style, known for its elegant peat smoke, yet Kilchoman also often has a hint of citrus that adds freshness. 20% of the malt is homegrown, and only Single Malts are produced – no blends. These whiskies are generally young and lively with a salt character due to peat that has been washed with seawater over centuries.
The whisky is fermented for a minimum of four days or 50 hours. Typically, fermentation would stop here, but Kilchoman extends it to create secondary fermentation and more esters. Small stills are used for double distillation.
Exclusive and Popular Whiskies
For its most popular whiskies, Machir Bay and Sanaig, the distillery uses a combination of bourbon and sherry casks. Most casks for Machir Bay are bourbon, while those for Sanaig are predominantly sherry. Both whiskies are at 46% and are neither caramel-colored nor chill-filtered.
