High West Double Rye! Whiskey is a rye whiskey, matured from 2 to 7 years in new burnt American oak casks, and composed of a mixture of two different whiskeys made on rye. It is designed to be twice as spicy (cinnamon, nutmeg and cloves) as the average rye whiskey. It consists of whiskey produced on the following mash bills:
– 80% rye, 20% malted rye from High West Distillery.
Smell and taste:
Nose: Mint, cloves, cinnamon, licorice root, pine nuts and dark chocolate with a surprising hint of dill.
Taste: Rye spices up front, then menthol, mint, eucalyptus, wild flower herbs, honey and allspice.
Finish: Cinnamon and mint with a hint of anise.

High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David – a former biochemist – was inspired to open his own distillery after seeing the parallels between the fermentation and distillation process and his own work in biochemistry during a trip to Maker’s Mark Distillery in Loretto, Kentucky. In 2004, David and his family moved to Park City, Utah to begin their new adventure, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s unknown whiskey history.
High West Distillery started out with a small 250 gallon still and a saloon visitor center. What was once a small operation in downtown Park City has now grown into an internationally recognized brand with four unique locations. In 2015, High West opened their distillery in Wanship, Utah, which serves as a whiskey tasting and distillery tour location and today houses a 1600 gallon pot still.
High West’s products have received numerous awards. In 2016, Whiskey Advocate – America’s leading whiskey magazine – named High West “Distillery of the Year.”
