According to the Tuscan tradition, Fanti has always produced Vin Santo according to the family’s centuries-old recipe: over three months of drying the grapes (Trebbiano, Malvasia and San Colombano) and six years of aging in “caratelli”.
As Filippo says: “From a berry, only a drop of Vin Santo.”
Hand-harvested from selected bunches and ripe grapes in mid-September. The grapes are hung in vertical nets to dry for 4-6 months as they develop a high concentration of sugar. Light pressing of the grapes and then fermentation and maturation for approximately 7 years in smaller barrels (caratelli) that are filled to 70%. After bottling another 6 months in bottle.
Grade:
Color of sparkling amber, with intense aromas of chestnut and honey, sultanas and almonds.
The taste is round and rich, where the aromas integrate well with the taste of licorice stick, pickled peaches and caramel, with a long lasting aftertaste.
Served: 15-16°C

A meditation wine! Suitable for desserts such as crème brûlée, cheeses, foie gras and traditional dry cakes and cantuccini.
