Filippo and Elisa have been producing Rosato since 2007 and it is made with 100% Sangiovese, specifically from vines from the “Podernovi” vineyard.
Since this area is one of the highest on the estate (420 m.a.s.l.), we are able to obtain grapes with very nice acidity and not too high sugar content, essential characteristics to obtain a fresh, fragrant and easy-drinking rosé.
Method:
Harvested by hand in early September. The grapes are lightly pressed and placed in large steel tanks, where fermentation takes place under controlled temperature (17-19° C). The wine is stored in steel tanks for a further three months before bottling.
Grade:
Clear salmon pink color with a fresh intense aroma of cherry, strawberry and pomegranate and floral notes of red rose. The taste is well balanced with notes of red fruit and minerals and a pleasant fine aftertaste.
Served: 8-10°C
Suitable for: Appetizers, simple pasta dishes, white meat, veal, fish and shellfish, creamy cheeses
