Method:
The olives are handpicked from late October to late November. They are then gently pressed at a low temperature (19-20°C) within 24 hours of harvest.
Characteristics:
The color shifts from greenish to golden as the oil ages. It has an intense aroma with green notes, which soften over time. The taste is full-bodied, with a hint of spice and slight bitterness.
Suitable for:
Seafood salad, raw or grilled vegetables, pasta with meat sauce, light or grilled meat, fish dishes, warm artichoke, and bruschetta.
Tenuta Fanti boasts over 8,500 olive trees of the most prestigious Tuscan varieties (Correggiolo, Moraiolo, Leccino, and Olivastra), as well as a traditional olive mill. Thanks to the high altitude of the trees, early harvest, and quick pressing of the olives, the oil is characterized by low acidity and a complex flavor profile. As the oil matures naturally, it becomes softer in taste and can therefore also be used for fish dishes.
