Elysis Rosé d’Anjou is a sweet and broadly appealing rosé wine from the Loire Valley.
The wine is produced just south of Angers, where the Loire River lazily winds its way toward the Atlantic Ocean. This is where the grolleau grape is grown—used to make this rosé, whose delicate sweetness is achieved by stopping fermentation before all the grape must’s sugar turns into alcohol. This is done by chilling the must down and then sterile-filtering the yeast cells.
Behind the pale salmon-colored wine lies a rather aromatic rosé with the scent and taste of summer red berries, especially raspberries.
In addition to being an obvious choice for sunny weather, it also pairs beautifully with melon and prosciutto, chili crabs, teriyaki-marinated salmon, or a spicy Asian dish featuring vegetables, fish, shellfish, or chicken.
Best enjoyed while young, well-chilled straight from the fridge or a cooler.
