The grapes are hand-picked when they are optimally attacked by “botrytis” (the noble rot). Fermentation takes place separately as the grapes from the different parcels enter the cellar. The wine is put together and matures in tanks for 4-6 months, depending on the vintage. The wine is bottled in its youth and continues its development in the bottle, as a Sauternes should do.
