Bodegas Pequeños Cava Brut Ecológico is an organic, dry ‘blanc de blancs’ cava, made from the chardonnay and macabeo grape varieties.
Cava refers to Spanish sparkling wines made through secondary fermentation in the bottle, just like its very famous French counterpart, whose expensive lawyers are quick to react if one happens to mention the place name that sounds like a mix of ‘slush’ and ‘campaign’. Now everyone should be on the same page, without anyone feeling too ridiculed or infringing on trademarks.
The organically grown grapes are harvested slightly underripe to preserve the acidity, which is so crucial in sparkling wine, while also ensuring the alcohol level doesn’t spiral out of control during the secondary fermentation when the bubbles are also created in the bottle.
The aroma and taste offer casual deliciousness in a dry sparkling wine with a fresh, crisp profile, aromatically leaning toward green apples, citrus, and slightly ‘toasted’ yeast notes. The bubbles are pleasant, and the finish more than lives up to the wine’s ambitions.
