A completely unique vermouth from Perez Barquero in Montilla-Moriles. It is made from a wine made from Pedro Ximenez grapes, which ferments in clay pots under a layer of flor. The wine is flavored with a secret mixture of herbs and spices and voila – a vermouth you’ll never forget!
Colour: Dark, reddish colour.
Smell: Spicy scent of citrus (especially orange), turmeric and elder.
Tasting notes: Fine balance between sweetness, spice and very mild bitterness. Notes of cinnamon, vanilla, dried citrus peel and almond.
Serving suggestion: Enjoy it neat, on the rocks, with tonic or in cocktails.
About 150 kilometers east of Jerez is Montilla. Here, fabulous wines are produced, which in method and style are similar to sherry, but which, because they lie outside its denominacion de origen, cannot be called sherry. Instead, they have their own DO – i.e. not Jeréz-Xérès-Sherry, but Montilla-Moriles (created in 1932).
Among Montilla’s finest houses is Pérez Barquero, which was founded in 1905 and, especially since the Córdoba family took it over in 1985, has risen through the ranks among wine connoisseurs. The house owns 100 hectares of fields in the Sierra de Montilla and Moriles Alto (the two finest areas), which can satisfy about half of their grape needs. Here it is the Pedro Ximenez grape that is king – not Palomino Fino, as in Jerez – and this also applies to the dry wines such as fino, amontillado and oloroso. The wines typically have a bit more body, and due to Pedro Ximénez’s ability to naturally reach the magical 15% alcohol, where the flor thrives best, the fino from Montilla is often not fortified with spirits at all.
