Anker Chokolade was founded by Martin Nørregaard and Mikkel Anker in 2015. Anker Chokolade is a fusion of a Michelin chef and chocolatier – Mikkel Anker – and a food lover with a passion for business – Martin Nørregaard. With our diverse backgrounds, we bring different perspectives on how a great product is created.
Mikkel’s background in the hot kitchen and Michelin restaurants has given us a different approach to the norms of “acceptable” flavors in chocolate. We do not feel limited by the notion of “It’s always been done this way,” but have allowed ourselves to think creatively and challenge the flavors traditionally found in chocolate. We work hard to develop the flavors in each chocolate piece so that it not only tastes good but also looks inviting, as we all know we eat with our eyes too.
The story began in December 2015, when we opened the doors to our first store in Vesterbro. Over the summer, an old basement was renovated and turned into a chocolate workshop, which finally opened its doors to guests on December 17, 2015, allowing locals to come in and watch the chocolate being made. Initially, we only opened on evenings and weekends, as Anker Chokolade was our side project alongside full-time jobs and evening studies. As demand grew, we decided to go bigger. Mikkel went full-time to keep up, and six months later, Martin did the same.

THE CONCEPT
At Anker Chokolade, we aim to challenge your taste buds with our unique chocolate selection. Our range changes with the seasons, and we work with two collections – a Summer Collection and a Winter Collection. We believe that ingredients are at their best when used in season, so we replace two-thirds of our assortment every six months, ensuring a constant pursuit of excellence.
Our core idea is to contribute to the traditional chocolate market by introducing new, exciting flavor combinations and pushing the boundaries of what ingredients can pair with chocolate.

WE LOVE THE CRAFT
Since we consider chocolate a craft, we have chosen not to use large machines that produce vast amounts of chocolate instantly. We believe love should go into chocolate production, so all our products are handmade. This includes everything from decorating the chocolates – often hand-painted with a brush – to molding the shells and filling the chocolates. Everything is done by hand.
You can see the craftsmanship in our stores, where production takes place. If you’re curious about our process, you’re always welcome to visit during the day, as that’s usually when production is in full swing. Having production in-store creates an authentic atmosphere with a constant aroma of chocolate, so there’s no doubt that you’re in a chocolate shop.
