Anker Chokolade was founded by Martin Nørregaard and Mikkel Anker in 2015. Anker Chokolade is a fusion between a Michelin chef and chocolatier – Mikkel Anker – and a food lover with a passion for business – Martin Nørregaard. With our different backgrounds, we bring diverse perspectives on how a good product comes to be.
Mikkel’s background in hot kitchens and Michelin restaurants has given us a fresh approach to the norms of “acceptable” chocolate flavors. We don’t feel constrained by the idea that “it’s always been done this way” and have allowed ourselves to think creatively and challenge the usual flavors found in chocolate. We put great effort into developing the flavors in each piece of chocolate, ensuring they taste amazing and look appealing, as you also eat with your eyes.
The story begins in December 2015, when we opened the doors to our first shop in Vesterbro. After a summer spent renovating and transforming an old basement into a chocolate workshop, we were finally ready to welcome guests on December 17, 2015, allowing locals to come down to the shop and watch the chocolate being made. In the beginning, we opened primarily in the evenings and weekends, as Anker Chokolade was a side project alongside full-time jobs and evening studies. However, as demand grew, it became time to commit more fully, and after a year, Mikkel went full-time to keep up with demand. Things progressed quickly, and Martin also joined full-time just six months later. We had now gone from full-time jobs and evening studies to being 100% focused on Anker Chokolade.
THE CONCEPT
At Anker Chokolade, we strive to challenge your taste buds with our unique range of chocolates. The chocolates we offer change with the seasons, which means we work with two collections – a Summer Collection and a Winter Collection. We believe that you get the best results from ingredients when they’re used in season. Therefore, we change two-thirds of our selection every six months, constantly aiming to achieve the finest quality.
Our core idea is to contribute to the traditional chocolate market by introducing new, exciting flavor combinations, pushing the boundaries of what ingredients can be paired with chocolate.
WE LOVE THE CRAFT
As we see chocolate making as a craft, we have refrained from purchasing large machines capable of mass production. We believe that love must be a part of the production process, which is why all our products are handmade. Everything from decorating the chocolates – often painted by hand with a brush – to molding the shells and filling them is done by hand. The craft can be seen in the shops, where our production takes place in both stores. If you’d like to see how we produce our chocolates, you are always welcome to stop by during the day, as production is usually underway. Having production in the shops also creates an authentic feel and a fresh chocolate aroma, so you will never be in doubt that you are in a chocolate shop.
