“Les Clos” is the largest of Chablis’ Grand Crus. It covers the entire slope from top to bottom and benefits from optimal sunshine due to its south-westerly exposure.
We are fortunate to have two plots which allow us to blend two types of wine that are different but complementary. The first plot, located at the top of the slope, where the soil is quite stony, produces wines that are bold, fresh and tight. The second plot, located halfway up the slope, where the soil is deeper, is exposed to slightly higher temperatures and produces wines that are extremely full-bodied, rich and round. It is thanks to this blend that our Grand Cru “Les Clos” offers such great complexity.

The first vineyard is located on the middle slope and benefits from slightly higher temperatures than the second, which is located at the top of the slope, protected from the north winds by the nearby forest. The two plots reveal once again that Burgundy is the “kingdom of terroirs”. The first parcel at mid-slope generally produces deeper, richer, fleshier wines, while the second parcels produce wines with greater acidity and tension. It is the mixture of the two that gives our “Les Clos” all its complexity.

The blend of wines from our two parcels is evident throughout the tasting. First of all on the nose, which skilfully combines the floral notes from the upper plot with the nutty notes (roasted almonds, hazelnut) from the middle slope. The rich, powerful palate is supported by an acidic structure that gives this wine balance and class.

Taste this wine with finely prepared fine fish and crustaceans (lobster, spiny lobster…), or with roasted or stewed poultry and white meat.
Recipe suggestion: pike perch with white butter sauce

Serve between 12 and 14°C (53-57°F).
Aging potential: 5 to 10 years and more.

The Maison Albert Bichot wine company was founded by Bernard Bichot in 1831 in the small town of Monthelie. Today, the sixth generation runs the company, which is based in Beaune just outside the city walls. Bichot represents fields all over Burgundy, and is today one of the largest Burgundy exporters. Furthermore, Bichot owns the six highly respected Domaines: Domaine Long-Depaquit in Chablis, Domaine Adélie in Mercurey, Domaine du Clos Frantin and Château Gris in Nuits-Saint-Georges, Domaine du Pavillon in Pommard, and Domaine de Rochegrès in Moulin-a- Wait.

Over the past few years, Maison Albert Bichot has gone through a generational change, not only in the management of the company, which is currently handled by Alberic Bichot, but also in the entire structure around viticulture and vinification. From previously growing and producing largely all wines centrally from Beaune, today teams of vintners have been created who are specialists in the production of wine – whether in Chablis, Côte de Beaune, Côte de Nuits or elsewhere . Likewise, production takes place on the domains before the finished wines are brought to the cellars in Beaune, from where they are packed and sent out to all corners of the world.

Located right in the heart of the small town of Chablis, Domaine Long-Depaquit’s impressive cellars contain wines from the area’s first-class vineyards. This Chablis possesses precisely the exciting characteristics for which the wines from Domaine Long-Depaquit are so well known. The Chardonnay grapes used for this wine are harvested by hand and come from vines that are on average 30 years old. The vines are grown on 2 different plots and the total area is 1.5 hectares.
