Le Clairin Vieux Sajous 5 ans is a blend of casks that previously held rums from Hampden, Mount Gay, Bielle, and Caroni, as well as whisky from the Benriach distillery and finally bourbon. This edition is crafted by Michel Sajous using the “Cristalline” sugarcane variety at his Chelo distillery in Saint-Michel de l’Attalaye. It delivers a rare intensity of empyreumatic aromas and flavors.
Through natural fermentation with wild yeasts lasting between five and eight days and distillation over an open flame in a pot still, this rum has been aged in Haiti for five years in the cellars of Distillerie de Port-au-Prince.
Limited edition.
Nose: Refined and noble, marked by empyreumatic notes (rubber, gum arabic), enriched with aromas of geranium, kiwi, and fresh sugarcane juice.
Palate: Elegant and vibrant, blending sugarcane juice and sugar with herbaceous notes and intoxicating hints of geranium honey.
Finish: Long and full-bodied, with chocolate and vanilla notes, herbal infusions (bay leaf, sage), earthy roots, and mild spices on a backdrop of dried bananas.
